A change has started that will impact the management of food allergen safety and will affect everyone who produces ingredients and foods. Triggered by guidance from the FDA and renewed interest in allergen thresholds, facilities will need to adopt a more quantitative approach to developing, assessing, validating, and verifying all aspects of their allergen control systems.
An important facet of this change is that facilities will need scientifically sound internal and supply chain data to justify the presence (or absence) of voluntary precautionary statements and free-from claims. Meeting these data requirements will only be possible if everyone along the supply chain cooperates to improve data transparency and traceability.
Facilities that begin preparing for these data needs will be able to minimize disruptions caused by shifting regulatory guidance, audit body requirements, and consumer expectations.
