This session is not about AI platforms. It is about the professionals sitting inside organizations that are being asked to adopt them, and why most of those efforts are stalling. The argument starts with something every food safety professional already knows: HACCP. Not as a compliance checklist, but as a framework for thinking about risk across three distinct levels of organizational maturity — static, dynamic, and strategic. Most companies are operating at level one. The question this session addresses is not which technology to buy. It is whether the professional is positioned to shape how it gets used.
Drawing on the 15-year arc of FSMA and using HACCP as a way to understand how AI is currently impacting the industry, we will look at what is possible specifically through the lens of the food safety professional, and how their role could evolve within the organization.
