Dr. Kathy Knutson is a microbiologist with expertise in food safety. She travels nationally and globally to consult side-by-side with manufacturers on recall investigations, risk assessments, problem-solving, training, and Food and Drug Administration (FDA) compliance. She trained to be a Lead Instructor with the FDA-recognized curriculum for Preventive Controls Qualified Individuals (PCQIs) in 2016 and has trained over 500 PCQIs. With 35+ years in microbiology and 15 years of full-time teaching, she is passionate about training and can effectively communicate at all levels in an organization from line operator to CEO. She has taught and consulted with companies on food microbiology, laboratory methods, interpretation of lab results, quality assurance, sanitation, pathogen environmental monitoring, Standard Operating Procedures (SOPs), Good Manufacturing Practices (GMPs), Hazard Analysis and Critical Control Points (HACCP) and the FDA’s Food Safety Modernization Act (FSMA) rules on preventive controls for human food, intentional adulteration, and foreign supplier verification. Her book, Food Safety Lessons for Cannabis-Infused Edibles, was published in 2020; she is a contributing author at CannabisIndustryJournal.com; and she writes blog posts on food safety to share her experience.
