BREAKOUT 1: Do You Remember? The Results of a Knowledge Retention Survey of Retail Food Handlers

Dr. Unkart began her career as an Environmental Scientist, first for EPA in their Air Quality Division then for a small, private consulting firm, where she conducted Phase I and II Environmental Site Assessments, remediated underground storage tanks, handled nonfriable asbestos abatement, and managed environmental resource management projects. From there, she went on to get her Masters in Curriculum and Instruction with an emphasis in Secondary Science Education. After teaching K12 students for a few years, she moved on to teaching adults, eventually earning her Doctorate in Adult and Continuing Education. She is now the Associate Director for the Entrepreneurial Zone, the department within the National Environmental Health Association that produces adult learning materials such as asynchronous online courses, books, and other study materials in support of NEHA’s certificate and credentialing programs. She also serves as the Instructional Coach for NEHA’s Instructors who, in partnership with FDA, teach many of the courses such as Special Processes at Retail, Plan Review, and Temporary Food Events. She is an avid organic gardener, passionate environmentalist, and a chicken whisperer.
