Estimating Mycotoxin Exposure in Guatemala and Nigeria

Dr. Ariel Garsow is a Food Safety Technical Specialist at the Global Alliance for Improved Nutrition (GAIN). Through her work on the EatSafe program, she collaborates with cross-cultural teams to evaluate the effectiveness of interventions to improve food safety knowledge, attitudes, and practices in traditional markets in Nigeria and Ethiopia. Dr. Garsow received her PhD from Ohio State University in 2022 with a focus on estimating mycotoxin exposure and increasing food security in Guatemala. She obtained her MS from Ohio State in 2019 where she researched the inactivation of biofilms in Clean-In-Place systems using ozonated water. Dr. Garsow received her undergraduate degree in food science with a minor in Spanish at the University of Minnesota Twin Cities.
