Nicole Martino is a former Health Sciences Professor and current Nutritionist and Food Allergy Specialist at Universal Studios Orlando, with over 20 years of experience in nutrition, health sciences, and regulatory compliance. During her time in higher education, she educated and mentored future health and wellness professionals, combining scientific rigor with real-world application. Her academic foundation continues to shape her approach to education, communication, and systems-level problem solving in the food service industry.
In her current role, Nicole leads initiatives focused on creating inclusive dining experiences for guests with food allergies and special dietary needs. She works at the intersection of culinary innovation, regulatory compliance, and guest safety, helping large-scale food service operations build programs that allow individuals with food allergies to dine with greater confidence and dignity.
Previously, Nicole served as Nutrition and Allergen Manager at Darden Restaurants, where she supported major advancements in food allergy and special diet accommodations across national restaurant brands. She specializes in food allergy risk management, regulatory strategy, nutrition and recipe analysis, and development of scalable dietary safety systems.
Nicole is a frequent speaker, presenting at industry and professional events including the Food Allergy Symposium for Industry, Florida Association of Food Protection, and Conference for Food Protection, where she focuses on regulatory clarity, operational best practices
